Out of curiosity what's he charging for the CG ribs?
Superb. So pull time based on temp and feel. How long approx was the cook? With beef are you supposed to crutch like pork?

I' have used the Texas Crutch before for beef ribs but don't think that the Cape Grim need it. time to cook was somewhere around 7 hours I tried to keep the heat around 220f but it wandered up and down over the cook as I fiddled with the vent settings.

Yep, the Cape Grim beef short ribs don't need foiling...just cook them through...7 to 8 hours, the texture when you poke them with a skewer will tell you when they are done.

I think was was $24 for a pack with 2 little but very meaty racks in it. Didn't catch the weight or $/kg sorry. I'm guessing it was expensive but by far the meatiest racks I've spotted on this side of the continent so far

There are three vans/trailers side by side selling meat, and he was one of them. Can't remember the name sorry but the meat vendors are all together. One of the three actually had pork butt too
