OK, so Valentines day yesterday, so I asked what she wanted for dinner and after we got past the "Chocolate and Champagne" joke, Pesto Chicken was the decision.
Brine some chicken thighs overnight in a basic water brine (1 Tab Salt in 1 Litre water) with a couple of spoons of Pesto added.
Fired up the Go Anywhere with my Grill Grates on top.
Tip: the cooking grate on a GA is really close to the fire, so alternate the chicken on the grill: one skin up, one shin down, one skin up etc. This will minimise flare up.
