Had a small feast on Saturday for lunch.
I've been wanting to use porchetta as a focaccia filling for a while and it turned out to be a real hit with our guests.

Then out in the Daniel Boone GMG Pellet BBQ it goes. I found a new use for the IKEA rib rack, up side down it allowed me to have two long trays in there at the same time:
In the meantime, I got the rest of the lunch ready, some Theos Cecina chorizos and some Costco beef ribs:
I think this has to be one of the best ways to eat porchetta and leftovers for dinner were easy, just 1 minute in the toaster and dinner is served
