Never smoked my own cheese before.
So I'm giving it a go.
I have some left over truffle, so I had an idea to make a 'truffle infused cheese' which I can then smoke also.
I picked 'Stracchino'. A soft cheese with subtle flavors, I figured I need the softness to help the truffle flavour penetrate, I also need the subtleness as the smoke and truffle should kick you like a goat.

I totally missed the pic with the truffles sliced thinly and placed over the cheese.
Leaving it for 2 days to fuse.....thinking about maybe putting it in a super hot oven for a few minutes to melt the cheese and fuse the wheel back together maybe......
