Loved how this turned out, yes, its cooked to a higher internal temp than i would do a rack etc, but taking it out earlier would not have rendered the fat down.
Cooked over cherry wood at 250f for 2 hours, then wrapped for 2 hours, then unwrapped for 30 mins.
It turned out fabulous & tasted great...Basically rack or cutlet and rib in one cut, lamb tomahawk? And at $15 per kg, its half the price of lamb racks
