I picked up a Pickled Pork Leg and decided to do something I haven't before.
I put it in the Offset and in a few hours it looked liker this..
About 7 hours later it came off with an IT of around 87c. We had to go out unexpectedly for a few hours so I wrapped with foil, Tea Towels and put it in an esky.
The final result was impressive. I will be doing this again for Xmas but I'll bring it to slice instead of pulled.
