SOURDOUGH PIZZA! I have been feeding my sourdough starter for 3-4 weeks now and it's finally strong enough to make a pizza
60% Hydration
2.5% Salt
25% Active starter4 hours bulk rise and then 72 hours in dough balls in the fridge. Took the dough out of the fridge and proofed for 2 hours, cooked at 425C in around 2 minutes. Both very basic, one cheese and one garlic (with fior de latte). I had a little taste but little men (8 and 10) smashed two whole 12 inch pizzas in no time flat. Considering that they had already had their dinner, that is quite the feat!
This pizza thing is fun hey!

So... The pizza was cooked in my Maximus oven on the balcony at my house.
The big brick oven is a commercial oven I am having built in my new bar I don't know how many bricks went into the dome, it is a Melbourne Fire Brick D130 though for those who want to check it out. I hired a stone mason to install it and so far it's looking great. Still a couple of layers of render, granite landing and flue to go before she's ready to cook though.
I actually bought the Maxi for recipe testing and I have to say it has been ideal.
