It's a piece of the proverbial ones you get your head around it. My favourite way is to segment the duck, slow roast the carcass in the oven for about three hours, collect the beautiful fat, make stock with the roasted carcass, use the portions for duck paella. it is fantastic.
However, this weekend I'm building a fire pit and string roasting a couple, just to see how it pans out

I ducked into Coles and got the last 4. They did say they had more stock and would re-stack the shelves.

I will have to try tomorrow. Can't wait to rottisserie the duck with spuds in an oven tray underneath, cooking gently as duck fat slowly falls on them. The spuds end up as good or better than the duck

Got a couple - need a bigger freezer! Now to work out how to cook them. This air drying with a fan business looks like too much work. I'm liking the looks of some of the "twice cooked duck" recipes - may try a variation of that?
I'm thinking of (defrosting prior obviously) boiling water over the skin after pricking it first, then low n slow breast down on the kamado until brought up to temp with a hint of plum wood. Remove from the kamado to rest and cool a bit, then ramp up the cooker to hot roasting temps and put back in for 10 mins or so to crisp up the skin...
Spuds in the drip tray for the low n slow then properly coated and back on the grill around the duck for the hot roast to crisp up at the same time.

Reckon 10 min would be enough for crisping up? What temp is food safe for duck? Same as chook at 74?

Got 3 ducks yesty after seeing this thread....I cant remember if I even like duck. Chimneys about ready duck going on in 3, 2, 1!
Appreciate the heads up by the way, wouldve missed out on the chance to cook something new and its way cheaper than croc

Grabbed one with the weekly shop today, The fresh whole Steggles chooks were only $4 per kilo as well, grabbed one that was just over 2kg, gonna cook it up on the Akorn tomorrow for dinner.
