Picked up a 2.1kg whole Steggles chicken from Coles yesterday on special $4 per kilo. Brined it overnight then washed and dried and put in the fridge for a couple hours to dry out some more. Rubbed it with Plowboys Yardbird at around 11 then back into the fridge for an hour.
