Right, first trip around the block. A few issues and some learnings.
Seems to have topped out at 330c by the door gauges. I didn't bring any potatoes with me for a multi-probe ie accurate measurement.
Heat has buggered the paint so will be heading to supercheap for some calliper paint. Doors have warped with the heat but I'm unsure if they will go back when it cools.
I tried to put the grill bars back but it's like launching a lilo on a live volcano. Too damn hot! Even with welding gloves. The grill must be well over 600C

Spray bottle some veg oil allover and go low and slow mate. Not sure what I'm talking about but seems logical to me. It's going to be a weapon.

Yeah, not impressed with the paint. Doors came back when heat drops off, they should be double thickness.
Looking forward to doing some Chicago style steak on the grill, Tlayudas, empanadas and neopolitan style pizza in the oven and mojo chicken in the rotisserie.
I haven't even tried using the parrilla yet, just heated and oiled today.

I did that with the parrilla today and it came up well. So well that I'm going to use it on the rotisserie baskets instead of taking them in for soda blasting.
Wednesday will be the first rotisserie cook

I just assumed it wouldn't be accurate and wanted to know the relationship between the real and display. I was assuming that relationship was going to be constant but I guess that's a big assumption

Yes, this is the 3" calibratable Forge Gauge, it's the same as used on the Silver Creek smokers (we have them printed with the SC logo). There is also a 5 inch that might look good on the beast!
Just a word on gauges: I always rotate the gauge so the target temperature is at the 12 o'clock position, that way I can see a a glance from a distance if it is over or under temp.
