Hi guys, sorry I’ve been MIA. I’m snowed under atm.
Things I’ve learned this week.
I don’t have the capacity to prep for 300 people cool-space wise
I do three proteins, 2 salads and 4 salsas, that’s three full days work for one person using mostly non-commercial work.
Before you buy equipment, make sure it fits in the space available along with everything else that has to be there
Recipes don’t always translate exactly as you multiply portions and the only way you find out is to taste
Trust the process

Everyone underestimates the work involved, particularly the customer! I don't do catering anymore, got sick of explaining to people who flip out at the cost, why, what they think is a "simple BBQ" can't be done for their budget of $10 per head.
Take notes when you scale a recipe up, when you do find the answer you'll want to remember how you got there! I take notes using voice recorder on my phone. -
Dropped into the brewery Sunday afternoon and had one of Hector Asado's spicy crispy chicken burgers.
Not a massive crowd, probably a good thing as they had a very busy Sat afternoon/evening, sold out of everything and got hammered by a storm.

Further learnings
Over-supply is your profit margin. It's much better to run out than have anything left over.
It's very hard to find good help.

Selling out is what you are trying to do from a business prospective so I think it was great you had.
Chicken may not have been up to the standard you want to hold but it was still way ahead of what you get from most chicken places so I wouldn't stress about it. -
Hi guys, quick procrastipost between oven rack cleaning and quoting on a catering gig for Saturday week.
I didn't do any good with finding a spot immediately for the container kitchen so i'm selling that and I've bought (well renting for 12 months) a trailer. https://www.facebook.com/realhectorasad…12544992221645/
I knew it needed some work but geez, it's more than I thought.
So, today went like this:
- get up at 6, drive 20 minutes to pick it up, 20 minutes back to the rego place - so early because I needed a spot to park
- they didn't like the weight being close to the GVM, so referred it to go over the pits, luckily enough I could get it in today
- the emergency brake doesn't work, the running lights have to be moved up
- can't get it fixed until 18th
- now arguing with the seller about coming to the party.
Gave up on the steam cleaner so it's chemicals and elbow grease. I wanted to soda-blast the cast cooktop trivets with carbonised crap all over them but as much as I'd like to I've never been able to give the local soda blaster any work at all. Every project has some reason he can't do it. Never mind, out with the ammonia bag, wire brush and detergent.
This weekend I'm doing the 12 Barks of Xmas carols that was delayed due to rain. It's a kid heavy crowd so its fries - cheese, chilli cheese, cheeseburger, pizza and nacho. Preparing 15 litres of spicy queso tomorrow.

No, it's 3000 but the allowable ball weight drops from 250kg to 180kg for anything over 2500.
