I think it is jumbuck.
You had the vents open on the side right? The metal slides up to reveal airflow holes.
If all you fuel, beads or charcoal are fully lit then you would burn the meat before it was done...
For my mind it sounds as if your fuel is not at temp.

Thanks for the feedback, im sure they were well and truly red hot and ashes over. I will pay attention to it tonight, but think i might add a few extra heat beads also.

Here is a few photos and tonights efforts. Maybe too much information, but heres the story.

So this time I used 50% more heat beads than recommended and i got much quicker results, but I still notice significant heat loss. I wonder does the food absorb a lot of the heat, or does simply opening it to flip the meat cause it to fade.
Im thinking next time ill used the same amount of fuel, but cook all of the thighs at once. I will give it about 5 or 6 minutes for the first side and up to 9 or 10 for the flip side.
Any comments would be appreciated.

i reckon this could be it.
When i do batches of wings and legs the beads die out quickly from all the juices.
Worth the wait though.
That's looking as I would expect it to on Beads. Charcoal would be hotter but, 250ish C is a really hot oven, so, plenty of heat for what you are doing. Good chance it is even hotter as the probe is not designed to read ambient. Try with some good Lump or Robot Turds.

I reckon you've hit the nail right on the head there plus maybe the addition of cold lumps of chook dropping the temps.
The joys of cooking with fire not gas in my opinion is the differing results you can get from simple changes like a few more beads or changing brands.
