Chuck is great. If you have a heap of it you can do some low n slow for awesome pulled beef and then vac pack leftovers into portions for quick easy meals.
I see a lot of people use chuck for pulled beef. Will it slice nicely like brisket or does it fall to bits? I am thinnking of some variety with it.
Maybe take it out just before it falls to bits - maybe around 83c?
