I have a gmg Daniel boon I leave the house while it's going all the time that's why I sold my offset and brought a pallet grill
I was leaving for hours until a recent issue with dust buildup causing hopper fires after a several hour cook, no issues for the first five or so hours but until I sort it I'd be close by.
Once resolved I would leave for a number of hours no stress
I have been cooking with them since 2002...I have used them without being present. It is only for a few hours and I was comfortable with where my pits were located to mitigate issues if they did arise.
Best thing about a pellet smoker is being able to go to bed, out to do shopping or work if that strikes your fancy.
Set and forget as long as you have the appropriate temperature probe monitoring.
Of course this is with an old school Traeger 075 which is Hector-proof

Dont they have some sort of phone app thingy too? Lets ya know ya temp when away? Or do ya have to be close for that too work?
We went out this morning and saw a movie with the roof let came back and house was still in tact .
Pellet smoker fire the win. Let's see what the food tastes like tonight...

gmg has it. Not sure about other brands.
Now has server mode so can go down the shops and control or whatever.

ah the concern of a 1st time pellet cook
I was exactly the same until my 3rd cook then i didnt have a choice and had to go out and leave it cooking.
Now i leave every cook unsupervised haha
I leave my Traegar. And Akorn too. Both however are in spots where if something did happen damage would be superficial.
I use my pellet smoker every week...and whilst I am home most of the time it's in use, I do leave it unattended regularly.
Last week did an 18 hour brisket cook that had the unit running for most of that time completely unattended.
Got a bone in Pork Shoulder sitting on the Akorn right now while I am at work, was up at 3am to fire her up, Pork went on at 4 and at 7 when I left for work was still comfortably sitting at 100c.
Will get home around 5pm to crank the Akorn up and do some duck fat roasted spuds and reheat the duck from Wednesday night for the fam early Christmas dinner!

do it all the time.. it was the 2nd reason why i bought one... first reason was more real estate
Just thought I would mention an update re the hopper fires I had.
The fellow from BBQ plus came out to my place today and ran the q to see what the issue causing the dust buildup then pellet fires was.
Turns out it looks like damp pellets not burning fully
He used a bag of BBQ delight ones and even left behind the rest of the bag
Talk about fantastic service, they deserve a shout out for it

A hopper fire (no matter the cause) would indicate that the hopper is not fan pressurised. What brand cooker is that?
Some of the Traeger users are stating if they go from the high setting to the cool setting it causes hopper 's. need to go down to a lower setting so it cools slightly first.
