Been a while since I joined. Been real busy at work. I finally had some time to do a bit of smoking in my modified offset. I did a bit of brisket bought at Mondos bulk in Osborne park. I went to buy some other bits and this is the first time I have seen a whole packer so I bought it. It started out at 5.6kg and by the time I trimmed it up it dropped to 4.1kg. I had a fair amount of hardened fat to remove and most of the top fat cap was already removed. None the less we gave it a go. Here are the photos. This was a 300 day old angus.
