I like your coal management here Bear. Keeping the coal piles where the meat is thickest for even cooking. Did you have any underneath? It looks a little like a pile of sand, to make cleanup easier maybe?
Yes, the sand acts as a
drip catcher/smoke reducer/fat fire preventer.
No coals underneath, as it can cook too quick. Heat management provided by adjustable height

ok peeps, I've seen some great looking cooks here, so not wanting to be outdone, we serviced the truck and used the hiab to get the wfo out of the shed.
This is the free one @Geoffo helped me get a while ago, it's been in storage up here at the farm till the patio extension is finished.
Anyone want to give me some ideas on how to drive it, size of fire, how long etc. Burning jarrah.

NFI Wazza, but in your shoes I'd be lighting a small fire in there and just winging it. Maybe try a sacrificial damper to kick off with?
