fish smoking experts,
Would it be ok to use maple bacon cure on salmon prior to smoking?
Thanks

Salmon cure

What's in the cure? Is it just salt, sugar/maple? If so I don't see a reason why not.
I presume this is a dry cure rather than a wet brine?

if I remember correctly I got from Misty Gully, salt, brown sugar, maple sugar and sodium nitrate.

Dry cure -
So pre mixed so you don't have to worry about getting the level of sodium nitrate correct?
I presume you're hot smoking here? You don't actually need the nitrate here but it won't hurt, if anything it'll be a brighter pink colour.
Go for it, hot smoked maple salmon sounds very yummy. Be intered to hear how it turns out.

I've done cold smoked salmon before (so no cooking)
I didn't use nitrates for it though, the recipe I had didn't ask for them and it didn't seem warranted
(I do use them for bacon and pastrami etc though)
I can find the cure recipe when i'm at home, it was pretty much just salt and sugar.

Thanks guys, will be an easter project, might even glaze at the end with maple syrup.

Spent the night in the fridge with maple bacon cure, rinsed and dried this morning then on a rack in fridge to dry and form a pellicle for a few hours.
Smoked slowly in Kamado for about 4 hrs starting at 120c for first couple of hours and slowly increasing.
Glazed with maple syrup every hour.
Will allow to cool then in fridge to settle, sample tomorrow.

I'm also doing a smoked salmon today. Just have it in a simple salt and sugar cure. Then will hot smoke it in the Pro Pit using some almond wood I came by from the local community garden.

Chris,
when you cold smoke the salmon are you using a smoke generator as it doesn't seem to be a long smoke?
Also I presume you rinse and then dry salmon in fridge for a while prior to smoking.

Stewie, if you want to try cold smoking and don't have a smoke generator, you are welcome to borrow mine.
