Hi all, been cooking barbecue wrong for so many years. Bought a Pro Smoke 2 weeks ago and so far chicken, beef ribs and pork belly.
The pork belly I had some trouble with, bit tough and wrong Smoke. Beef ribs I put on to much rub. But damn tender. So still a win. The chicken was the best ever, just a simple rub and some whole lemon. Going to buy an injection kit this week and try turkey

I used Apple wood for the pork belly and I haven't done the turkey yet so I haven't decided what I'm goin to inject it with.

You could brine the turkey and inject some of the brine to speed up the brining process.
