It's cold outside but a fire helps and since I haven't fired up the Maximus for a while, it got a run tonight.
I've always had trouble getting the oven as hot as @Narm Naleg does and never seemed to get much over 250c but tonight, after years of using this oven, I finally got it to sit around 300 plus. If you look at the second pic, you'll see the baffle which gets put in after the fire is established in the centre and I've always pushed that all the way to the side wall, which didn't leave a lot of space for the fire and I think constricted the airflow. Tonight I thought I'd try leaving it a bit away from the side wall and I was able to feed a bit more wood with plenty of gaps for the air to flow through and the result was a much hotter fire. Why I didn't click on to this earlier is a bit of a mystery but maybe I just don't learn fast !
Anyway, it turned out great pizzas in a couple of minutes.
