Usually hump day falls in the middle of the working week, but not this week. Saturday is going to be hump day. To be a little more accurate, it will be Brahman Hump day.
I've got this nice 2kg sucker dry brining tonight, and in the wee hours of the morning it will be rubbed with cracked pepper, paprika, garlic powder, onion powder, and just a whiff of brown sugar. Planning to cook in the UDS @ 250°f for as long as it takes until it probes like butter.

I think it's one of those things that you'll need to ask around for. I got this one from Low & Slow Meat Co in Tingalpa. They got one carton in, and advertised it on their FB page. I put my name down for one and picked it up a couple of days later. Not sure if it is going to be a regular item on their shelves though.
@Swamptrout also posted about a butcher on the northside that could get them. I think it was over at Aspley. A bit too far for me to go though. -
