most new world and quite a bit of old world Riesling is fully dry these days. A lot of Gewürztraminer too. The ones that have some residual sugar and so off-dry are perfect as captain says, for spicy Asian food.
They all have a lot of acid so go really well with fatty stuff like pork belly. Hmmmm pork belly and Riesling
