Any idea how long for?I went to cook three racks of special ribs for tonight's dinner, 2 were from one animal and one from another. The single rack has a different smell and I fear it's boar taint. I've rubbed it with lots of salt and submerged it in milk, hoping that 2 hours would be enough. Thoughts?
Boar taint (for those that have not come across it) is caused by hormones in non-castrated male pigs. Not everyone can smell it, but if you are one of the ones that can, let me tell you it smells like faeces.

No problem at all, I ended up soaking it in milk for 3 hours and it was fine. In the end I don't think it was boar taint, it probably just needed a rinse.
It ended up being the night's favourite cut (rubbed with habanero death dust), I think the milk bath did it good and I might do it again (overnight this time) just to check for flavour difference
Interestingly the skin wouldn't crackle, unlike the skin of the non soaked which bubbled up like crazy with the help of a heat gun.

As for crackle, by soaking you added a heap of moisture, which non soaked didn't get. Moisture is the enemy of crackle. So, can you soak the meat in the fridge while leaving the skin exposed? Interesting question, does it work to do this?

I didn't expect the moisture to be absorbed by the skin, but clearly I was wrong. If logistics permit, I'll try your suggestion this weekend @Wazza and soak just the meaty part. Fingers crossed.
