Joined this forum after buying my maximus. Been cooking pizza with my uuni for about 18 months and loved it but wanted to cook bigger pizzas.
The first couple of cooks I struggled to get high temps and found it was the quality of wood (bunnings) I was using. Bought some vintage ironbark and yellow box and it was so much hotter.

All I use is 500g caputo flour, 300g water, 10 grams sea salt and a teaspoon instant yeast.
Cold proofed for 48hrs. -

I've had that on my list for 3.5 years!
Every time I consider it I end up with the "I'm not ready for such a big commitment" conclusion. But I think it could take pizzas to the next level. I even still have the Ischia sourdough starter pack in the fridge (probably expired by now).
