Breaking in our new kettle with a brisket and a pork scotch. Should be an interesting cook.
Found out at 7.30 that the cook had pulled out a brisket and a pork collar but for us to cook for tea. A bit under the pump as the new kettle was still I'm the box! Managed to get it assembled and lit and knock up a rub for the meat by 8.30.
No time for too much mucking about!
Thank god the kettle has a thermometer in the lid otherwise be flying blind. The guys want to eat around 5.30 so not too sure how this is going to turn out.
Usually we'd run at around 225-250f but trying to sit up around 300f today.
