Another so called 'expert' who actually isn't ? I didn't see it but I think I'd cringe.
I actually didn't want to say much in a public forum, but a reverse sear that leaves a lot of grey with a little pink in the middle. Perhaps it was a cook that didn't go to plan, we have all had those. Problem is the temp of the q he put it in was really high, thats never going to give an even almost sous vide result IMHO.
Did he at least cook it with some hardwood before he seared it? Although, I do not wish to seem arrogant, I guess a reverse sear does not have to involve wood.
I've seen a few of Ben's shows, all I can say is he needs to join our forum and we'll teach him how to BBQ
