Ive always gone to 90-92 internal (thats on a gas smoker also) - always worked well. Last one i did, it hit 90/91 and was able to hold at that for over an hour (it didnt keep climbing) rather than taking it out as soon as it reaches that temp
Then wrapped in paper in esky for about an hour - delish

I did only take this one to 86c though.
Fall apart melt in mouth like fillet steak only cheaper.
Due to happens!! it did get a good wrap in the esky for near on 6.5 hrs.
