10.30pm AWST and briskets are on. More salt and pepper being toasted for the chuck as the hungry briskets pretty much used up all I made.
Hopefully this won't be too long of a night.

Bit bored, not quite time to put the smaller chuck in and all you buggers are probably asleep, exactly where I'd like to be. @Bentley Meredith must be day time where you are, so what's happening?
Actually, thoughts on how long a 6lb chuck will take to pull? I'm guessing 10 to 12 hours?

One of the guys at work is related to the family that runs Robins Island beef. Hes about to go on a holiday down there for a few days at the farm, must say i'm very jealous of him.

From what I can see that's got to be the best looking Brisket's I've ever seen @Wazza
What size are they? -
Be about 6.5kg. Have to say there is a big difference in quality. Trimming up one had little marbling, while another was very marbled. Didn't expect such a difference.
Anyway, one is done, only 9.5 hours which was a huge surprise at 230f. Others not too far away, chuck still a while off.
I managed to catch it in time, it has that wobble, you all know that wobble I mean, that firm wobble like when a young lady....... Anyway, I digress, it probes like butter.
