Sometimes I do.. Just thought I try without it this time. With this much heat it’s probably better with it.

It's something I've considered too but never bee game to try. I don't often get the oven over about 300c and that does pizzas in couple of minutes but more heat and char is something I'm now tempted to have a crack at.

It depends what kind of pizza you like. I prefer nepolitan style pizzas which require really high heat and you get that charing. Usually cooks around 90 secs.
My wife prefers crispy New York style pizzas which require lower heat but take 3-4 minutes to cook.

Looks awesomeJC, what’s your thoughts on the flour? I’m in the same boat. Used Caputo, never tried Stagioni. Also what hydration did you use?

Pretty simple really. 500g flour, 300g water, 2 teaspoons of dry yeast and 12 g salt.
After mixing bulk prove until double in size then ball up and cold prove for 24hrs. -
