Slow Roasted bone in Chuck in the Hark Smoker

  • Bone in Chuck Slow Roasted

    This was a bit of an experiment as we bought a chunk of Chuck to make a casserole. After getting home and having a look at it the brain started ticking over and we wondered how it'd come up if we Slow Roasted it.

    At around 40 mm thick we decided to go along the lines of 3-2-1 ribs





    Being a short notice thing we went with a lick of Honey Mustard, a sprinkle of Slap Yo Mama and a godd dose of Moroccan Seasoning form the bulk bin at Kakulas Sister in Freo



    After nearly 5 hours in the smoker the internal temp was up to 156F so decided to pop it in some foil with a splash of Coke.



    This is where it got a little confusing for us. The internal temp shot up to 203F in half an hour! We were expecting it to take at least an hour or two? Maybe because it was a thin slice of meat rather than a chunk? No, that can't be right because ribs don't do it.



    Out of the foil and kept warm in the oven @ 70C while we got the vegies ready. With a TEENY little taste test.



    With the Veggies ready it was time to have a good look at the Chuck.



    Sliced up



    And finally plated up with Spud and Pumpkin Mash. Cauliflower Stirfried in Lemon juice, Garlic and Pecorino Cheese.
    For the gravy we chopped up a bit of Celery,Carrott,Onion, Tomato and Red Capsicum. Browned in a bit of OO and then a good cup of red wine. Simmered until it thickened and the veg was soft and added a smidge of gravy powder.



    It was delicious and we agreed that it'd be making a repeat performance soon. The leftovers made a great meat and gravy roll too. Definitely something worth having a fiddle with
