I think they actually had two hours for the Ribs (remember they had to go on before the entre')....but still...damn tight!

Yes in the time frame not to bad even 30 mins to get the smoker going and prepare the ribs and rub for the Hark tough going if that's all the time they had.
I have a suspicion that they are either handed over "hot" BBQs at the start of the challenge, they are given time to do it themselves, or after a set amount of prep time and filming there is a "tools down" period to light up the chimneys/fireboxes and bring the unit to temp.
In various eps they race straight into food prep and then wow amazing their kettle is instantly smoking hot, without any talk of lighting rocks, letting the chimney and then letting the BBQ heat up. They might even be allocated a set number of rocks pre-lit then do the rest themselves... I remember one team was begging another for more (lit) rocks at one stage through the season.
I did enjoy seeing the rib challenge last night! That's what I was waiting for all season; seeing some low and slow action and the prep for it. It was interesting watching the removal of the rib membrane (using paper towel) which I've read about heaps but never seen.
Funnily enough as soon as they said 4 hours for the ribs I knew it was going to be tight, despite never cooking them (yet..). They also showed a hood temp of 250f (121C) on one of the offsets during the cook so I guess the teams that succeeded in cooking their ribs through knew they had to bump the temp up from the what 225F/107C usual.
