Beef and Pork Ribs Yuummmmmm
We had the Kids over for a BBQ and thought that we'd show how we set the fireup as well as the cook.
We have been playing with heatbeads instead of wood to get a steady,predictable fire while we learn how to cook on the Offset.

Add some rub. Mad Hunky GP for the Beef and some for the Pork
Setting the fire, a 4kg bag of heatbeads at the back of the firebox. I have turned the bottom grate sideways to lift it up and get soem airflow under there. Also I found that a couple of the Kettle bead rails work well to hold the beads in.
Added a lit Chimney of beads and away we go
In goes the ribs mmmmmmh

Out after 3 hours and ready to Crutch
Ribs were wrapped in foil for 2 hours with a splash of coke in the bottom
Out of the foil and back on for an hour to baste. A bit of Sweet Baby Rays for the Beef and some Plum sauce for the Pork
Time to take them off and feed the crew
