We found this recipe in an old magazine in a doctors waiting room. A Saganaki is a small Greek frypan and is often used for individual serves. Not having them we went with one big pot on the Sideburner.

Saganaki Prawns with Haloumi
Ingredients
1 1/4 cups Olive Oil
8 cloves Garlic, sliced
4 strips Lemon Rind
24 green King Prawns, peeled leave on the tails ( Add more you know you'll love it!)
250g Haloumi Cheese broken into pieces
250g grape or cherry tomatoes, halved
1/2 teaspoon Chilli Flakes
A Handful of fresh Oregano leaves
Sea Salt and Cracked Pepper
Crusty Bread to serve with it.
Method
1/ Heat oil in a saucepan over medium-high heat. Add Garlic, Rind, Prawn heads and shells and cook for 10 mins until flavours infuse.
Strain Oil through a sieve pressing to extract flavour.
Discard garlic, lemon rind, heads and shells.
Heat Oil in same pan over high heat.
2/ Cook Haloumi for 2 mins until golden.
Add Prawns, Tomatoes, Chilli flakes and Oregano.
Cook for 3 to 4 minutes, until prawns are just cooked.
3/ Spoon into serving bowls and season. Serve up with crusty bread.
