Dude, I have been on the DarkSide since 1998!
Lets see, last time I cooked on an Evil Stick Burner was 2005 I think. Was at a competition in Fairfield (in the San Francisco Bay area). Still had my Traeger 075. Site was in a parking lot of a business, was a nice landscaped are by the parking lot, seemed like a nice area for the pit to be near...3am, sprinklers com on...by. by Traeger!
So the promoter has a big old red Yankee offset he has at the competition. I had to call him, ask if I could use it. Transfer the Brisket & Butt, and then did the entire rib cook on it. Got the Traeger going about 8am, so was able to do the chicken on it!
Think I finished about 7th and had a 1st in Ribs and 2nd in Pork!
I will leave the Evil Stick Burners for the young guys!
