    2kg of pork neck minced and extra 150gr pork fat
    about1 large onion, shallots are better chopped supper fine with about 4to 5 cloves garlic to your taste chopped supper fine
    chillies to taste we used 10 chopped supper fine maybe pepper to taste
    addNam powder nead for at least 10 min
    should become very sticky
    divide into sausage shapes in sheet of glad rap and give it a spin to make a tight roll, refrigerate mixture will firm, you can the cut
    sections to cook we just flatten the out like Hamburger but you could roll a sausage shape as well

    Psleave in fridge a couple of days to improve flavor not essential but we have found it produces better flavor by doing so


    You can buy Nam powder from any Asian grocer It looks like pink sugar and one packet does 2 kilo's of meat, make sure to not miss the kneading process
