They look great, the easiest is to get the whole side belly with ribs and cut up yourself normally around 13/kg from the butcher in Mandurah.
Is that the guy at the Meadow Springs shopping center?

Great thanks my mate buys his Jerky and raves about it.
Should also mention it's cash only, and a typical Asian butcher, but the pork neck especially looked great and at $12.50 I will definitely be back.

Hey jimmy no not direct through the butcher "Rumps" in Meadow Springs the best i can work out they are at the top end of the porker side 24-55kg live weight(baconers are 55kg plus).
I found it hard to get what i really wanted so went and bought the whole side of ribs and belly, he cuts it with a band saw just near the fillet and i take it like that.
A trick for young players at comps(that refers to me) is to make sure you get the same side of the animal for all ribs you cook so they all lay the same way.
@BBQ Smoke Cheers mate. The thing that shits me is that its the most expensive cut in the comp and as you said unless you buy a whole side you wont get what you want. A couole of people have been going to conventry markets and buying the loin and trimming them up. Cheapest option at $16kg.
So since then i have worked out a deal and the butcher will cut to the the ribs to size i want for the comps and use all the other cuts in store.
Brisket $22.50/kg
15/kg for beef shoulder boned
10.8/kg pork shoulder boned
10/kg lamb shoulder boned
Those prices are pretty steep, especially the brisket...
@3x0du5 That all depends on the buyer i guess and if the same product scored the highest for brisket in any ABA comp recently and it has a marble score of 5 and export quality Waygu beef i think it is worth it.
I tried it back to back with cape grim brisket and found it to be exceptional (a $200 test run by the way to make sandwiches)
Yes on the high end but if the quality is there and the butcher helps out now and then it all evens out in the end when you have the means

I paid $21.50/kg for yearling Scotch Fillet from Harvey Beef. Only downside is I have to buy a whole carton... $446 for 10 short cut Cube rolls.
