finally got round to cooking up the beef ribs from the group buy
Original plan was to cook up one rack for the gf and I and throw the other half in the freezer. Ended up having a mate come round so did both racks and served it up with some coleslaw and mac & cheese. In hindsight probably should have still only done one rack as these things are monsters and two ribs each is a hell of a lot of meat!
Cooked until it probed like butter (about 5 hours) on the Tri-Fire with hickory and jarrah. Kept the temps around 225f and they came out real juicy and tender. I'll be ordering more for sure!
Basic rub - salt, pepper, garlic, onion powder, chili, paprika, mustard powder... think that's it...
