I think part of the trap with a steel Kamado is it comes up to temperature fast! In the time it takes to go inside, shake the snake and grab another beer...she's shot through the roof!

yeah. I think that's what caught me out. I'm use to the offset where it takes time to build a fire and get everything up to temp.
I lit the Akorn and then kept working on my prep work. Next time I'll do as BBQ Smoke said and get everything set up before hand.
