trying to cook brisket or pulled pork to a time deadline rarely works out. They can vary in time depending on the cut and size so always aim to have the meat done well in advance. It can sit finished in an esky wrapped in foil and towels for hours, in fact the longer it sits like that, the better it is.
I did expect it to be done with more than enough time..... my stupid fire building skills shot me in the foot!

A good alternative to brisket is chuck but it will still depend on getting good quality.
Yep get a chuck....better than Brisket...not as pretty but a better feed (and cheaper).
